Most of us are well aware that lobster shells change color when exposed to heat (like in a pot of boiling water, for example). But the sea creatures’ blood is also intriguing. Lobster blood is initially clear and turns blue when it hits oxygen. The blood of lobsters is clear in colour though it turns blue when exposed to air – this is because their blood uses haemocyanin for its oxygen transport.

Yes! Yes I did know that. Not for any noble reason. But because I live in Maine, and having to watch people carve up and eat lobster is unavoidable until after you’re 18 and on your own.
